What do you need to make it?

  • Ginger – about 3 inches chopped (quarter sized) – BOWL A
  • Garlic – 15-20 cloves chopped
    • Divide into 2 bowls – BOWL A and BOWL B
  • Turmeric – 4-6 pieces of turmeric (chopped but not too finely) – BOWL A
  • Horseradish – 3-4 inches chopped (quarter sized) – BOWL A
  • Lemon – 1 cleaned and sliced – BOWL A
  • Celery – 4-5 sticks washed and chopped – BOWL B
  • Green Onion – 1 bunch chopped
    • 1/4 from the bottom – BOWL A
    • 3/4 – BOWL B
  • Carrots – 2 large organic carrots chopped in quarters – BOWL B
  • Vegetable Broth – 1 Organic Imagine Vegetable Broth Low Sodium
  • Rice – 1 cup
  • Himalayan Salt – 1 TBL
  • Cracked Black Pepper – 2 tsp
  • Cumin – 2 tsp

 




Step 1

  1. Simmer BOWL A garlic in vegetable broth
  2. Once the garlic is cooked through (not brown) add rest of BOWL A and entire vegetable broth
  3. Bring to a boil
  4. Simmer for 1 hour

Step 2

  1. Strain broth (keeping broth and filtering out roots)
  2. But pot of broth on the burner and bring to a simmer
  3. Add BOWL B ingredients, spices and rice
  4. Simmer until rice is cooked

    This soup is so good! I’m addicted to it – pairing it with a salad or chicken breast is perfect on a cold winter day. I’ve even been seen sipping it from a coffee cup as a great afternoon pick-me-Up. Do yourselves a favor- get the correct ingredients- do not use powdered ginger, bottled lemon juice, jar horseradish, or anything other than what’s listed. I’ve added collagen to increase the protein content, quinoa to get some healthy carbs in there. It’s all SOOOOOOO good!!
